Cheap and easy meals
Will have some easy-to-cook and easy-on-the-wallet meal plans. Will mostly focus on veggie-based meals, not necessarily because I'm vegan, but mostly because I am a goddamn cheapskate. The price of meat in the Philippines is getting crazy.
This particular entry will probably serve to collect backlinks once I collect enough recipes and begin moving them into their own entries.
Fried Eggplant and Bagoong
Not really much of a recipe, just a quick note that eggplants, sliced into thin strips and fried till golden brown, goes extremely well with some sweet-and-salty bagoong alamang (salt-fermented shrimp-paste) on rice.
Quick-pickled cucumbers
- Peel cucumbers and slice into thin medallions.
- Prepare the pickling liquid by mixing diced onions, chilis and ground black pepper (adding sugar to taste) to enough vinegar to submerge the cucumber slices.
- Let the cucumbers soak in the spiced vinegar for at least an hour, but the entire thing gets better the longer you let it soak.
Take note that this is not shelf stable, but will keep for up to a week in the fridge. Assuming there's even anything left once you've had a taste.
Fried tofu cubes
- Slice a block of tofu into half-inch cubes.
- Dip each cube into some beaten eggs or the egg-replacement of your choice
- Coat each cube in some breading mixture (I usually use the pre-mixed stuff for fried chicken
- Fry each batch until they are golden brown, around 1-2 minutes, or slightly longer if you want them firmer and toasted.
